Eating Cajun food is one of the big appeals of visiting the region. Although it bears resemblances to the Creole cuisine you’ll find in New Orleans – lots of seafood, rice, rich tomatoey sauces and gumbos – this is more rustic, often spicy, and using plenty of pork. At lunchtime, takeaway boudin (spicy sausage made with rice) is a treat, as are rich pork cracklin’ and salty hogshead cheese.
