Hi there, just on Panama, it’s been a few years since I was there (they were filming Quantum of Solace in Panama City’s old town, for instance) so the memories have had a chance to fade. These ones haven’t:
Lost & Found hostel, spectacularly sited up in the cloudforest.
Panama City old town – pure crumbling grandeur (though I hear it’s a bit flasher there these days, since Bond came to town).
The train from Panama City to Colon, passing by those enormous canal locks, ducking in and out of rainforest. Colon itself was pretty scary.
San Blas – the tourist-centre islands weren’t so great but I managed to wangle a night on one where just one family lived. They put me up in a hut at the other end of the island (all of ten minutes’ walk away). They speared me a conch for my dinner.

It’s been quite a while since I was in Panama, too, but definitely agree with Neil about Casco Viejo. Other highlight for me was a very lovely and lazy few days out in Bocas del Toro – I remember the boat trip there being quite an adventure…
